Fat Head Pizza Base

Making pizza bases with cheese is great, but they STICK TO EVERYTHING. To avoid this massive pain (and I mean massive, do not EVER try to do this on baking paper, unless you like eating baking paper), get yourself a silicone baking tray and silicone rolling pin.

I use a tupperware microwave bowl to nuke the mixture and when combining it doesn’t stick to that, but once you start pressing it into something, it’ll stick.

The silicone tray sweats for us, so we flip the base, dry the try and bake it upside down.

  • 170g grated mozzarella cheese
  • 85g almond meal
  • 2 tbs cream cheese
  • 1 egg
  • +/- salt to taste
  • 1 tbsp oregano

Put the mozzarella and the cream cheese in a microwave bowl and nuke for 60 seconds. Fold in the almond meal and then nuke again for 30 seconds. Add the egg, salt and oregano and mix together well.

Put the dough on the baking tray and roll out so it’s nice and even.

Bake until the top is golden brown, then take it out of the oven, flip it off onto some baking paper, dry out the baking tray and put it back on the tray upside down to brown the other size.

Once that’s done, load it up with your preferred pizza toppings and bake again! 🙂
