I had a chat with a team member at Source Whole Foods and they put me onto this stuff, which was put together by The Paleo Chef. I document it here so I always have a spot to go find it, and as I refine the recipe for our own tastes; Good thing I found out about this as Source, as they have “maca”, which I have no idea what it is, but it’s here.

  • 230g tahini
  • 230g grass fed butter or ghee
  • 85g cacao
  • 1 tbsp turmeric
  • 1/2 tbsp cinnamon
  • 1/2 tbsp maca
  • 1/2 tbsp honey
  • 1 tsp vanilla
  • 1 tbsp gelatin
  • 1 tsp peppermint essence

Smash the Macadamia nuts in the TM for about 5 seconds on speed 4. Set aside. Clean the bowl.

Put the butter into the Thermomix; Best to chop it into cubes so they spread out and it’s easier to get to 230g; Once it’s all in there, set the TM to 50 degrees and run on stir speed for 5 minutes to melt the butter, but not heat it up too much.

While that runs, measure out all the small dry ingredients (not the Cacao) into something so you’re ready to chuck it in later.

Measure in the 230g of Tahini, set the TM to 37 degrees and run it on speed 1 for 3 minutes

Weigh in the Cacao, pour in the vanilla and honey and dump in the rest of the dry ingredients you measured up earlier.

Run the TM without a temperate set for 5 minutes at speed 1.

Scrape the bowl, and then  give it a quick burst for a few seconds on speed 4 to finish.

Put the nuts evenly in the bottom of your chosen slice tray, then pour the mixture over the top. The mixture should be quite thick, so slowly pour it evenly over the nuts at first so you get good coverage. Put in the freezer for 2 hours. Cut into 12 pieces, and enjoy!
