Balsamic Beef Stew

This is a great little recipe that makes the most delicious stew. Doing in the Thermomix makes it really creamy and wonderful, with a lot of the steak disintegrating delightfully.

Lets start with what you’ll need;

  • 1 large onion, quartered
  • 1 clove garlic
  • 4 Rashers of Bacon, rind cut off
  • 30 g olive oil
  • 800 g Steak chopped into small cubes
  • 2 medium carrots peeled and chopped
  • 2 sprigs fresh thyme
  • 40 g balsamic vinegar
  • 400 g tin diced tomatoes
  • 1 tablespoon vegetable stock concentrate
  • 200 g water
  • 50 g coconut flour
  • salt and pepper to taste

Here’s how you turn that into the most awesome stew;

Whack the onion, garlic and bacon into the Thermomix, and hit it for just 3 seconds on speed 7.  Scrap down the sides afterward.

Drop in the oil and run it for 3 minutes at 100 degrees, but only on speed 1

Then put the beef in, and run it on Varoma for five minutes, on the mixing speed but in reverse.

Finally, add everything else in, plus the pepper and salt. I like a lot of pepper here. Cook it for 60 minutes at 100 degrees, again in reverse on mixing speed.

Then, prepare to be amazed. 🙂
