Spicty Tomato Meatballs

These are some tasty meat balls. In fact, we found they were even MORE tasty reheated in the microwave the following day. Make a double or triple batch and freeze for instant meals later on!

  • 400 grams of beef mince
  • 3 garlic cloves, crushed
  • 1 small onion, grated
  • 1 cup almond meal
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 sp paprika
  • 1/2 tsp chillli powder
  • 1 beaten egg
  • Salt & Pepper

For the sauce;

1 tbsp olive oil

1 small red onion grated

1 red capsicum, finely chopped

  • 1 red chilli, seeded & chopped
  • 3 garlic cloves, crahsed
  • 400g fresh tomatoes, chopped
  • 1 cup of chicken stock
  • Salt & Pepper

Once you have everything, make the sauce first; Fry the onion and capsicum until they soften, then add everything else and let simmer while you make the meatballs.

Combine all the ingredients for the meatballs and mix with your hands until well combined. Then shape them into small meatballs, and cook them in a pan with some coconut oil until they are more or less cooked through, then drop them in the sauce and let them simmer there for 10 minutes.

Your done! Serve with some steamed vegetables and you are going to love them!
