Spinach Quiche Muffins

Calling these muffins might be a stretch, but we make them up in muffin tins so we have ready to go servings, one for a snack, two or three for a main meal. They are quite tasty too!

  • 3 Eggs
  • 3/4 Cup Milk
  • 250g Frozen Spinach, thawed and drained
  • 125g of Feta cheese, crumbled
  • Fresh Parsley
  • Salt & Pepper

It’s pretty easy, just whisk the eggs first, then add the milk and whisk that into the mixture. Strain / Drain the defrosted spinach of as much liquid as you can, then whisk that into the mix, along with the crumbled feta cheese. Add in some chopped fresh parsley, again, we like a lot, but we have yet to quantify it exactly.  Season with Salt & Pepper, we like lots of pepper.

Bake for about 45 minutes, until they get a bit golden brown on the top. They are great fresh out of the oven, or let them cool, pop them in the fridge and eat them cold.
