Another great low carb, perhaps even paleo meal the whole family really enjoyed. Best of all, it’s really easy to make!
- 1 Kilo of chicken meat (we used breast, but thighs work too)
- 4 Cups of broccoli florets (cut them smaller than the photo, we went a bit big)
- 1 Cup of sliced mushrooms
- 1/2 Cup onion, finely diced
- 1 Cup coconut milk
- 1 tsp Garlic Powder
- 1 tbsp Curry Powder
- 1 tsp paprika
Preheat your oven to 180 degrees. Put the chicken in a pan, with enough water to just cover it, and simmer for up to 20 minutes (thighs will be cooked more quickly), then remove from the water and set aside.
Add the Broccoli to the same water and simmer for 3-4 minutes, then remove it.
Dice up the cooked chicken, and add everything to a large mixing bowl and mix it up evenly.
Transfer to a baking dish and bake for 30 minutes, and your Mish Mash is ready to eat!
