Grilled Parmesan Fish Fillets

This was crazy tasty, and super low carb to boot! Better than any store bought deep fried fish!

1/2 cup Parmesan cheese
50g butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1 pinch celery salt
1kg boneless white fish fillets

Take everything but the fish fillets and mix together really well. You want the mixture to be fairly thick, if it ends up a bit runny, add a little more parmesan. I used grated parmesan, but from the deli section, not the c.anned stuff.

Next grill your fish fillets on both sides. I used whiting fillets which you can get for around $10/kg these days, so it makes for a very cheap feed. 1kg should easily feed 4-6 people.

Be careful not to overcook the fish; Once both sides are cooked, plaster the top of the fish and slide it back under the griller; You’re only a minute or two from serving now, just wait until the parmesan mixture goes nice and golden brown on top, then get them onto a plate and into your mouth!

Super tasty, even the cheese hating Mr 15 gobbled them up. 🙂 If you make sure you use gluten free mayonnaise you are good to go if there’s a celiac in the family. We use an egg mayonnaise which is not only gluten free but also very low carb.
