Who said you cannot have your cake and eat it to? This delicious “breakfast cake” is both yummy, and good for you!
You will need;
- 2 cups rolled oats
- 1 tsp baking powder
- 1/4 tsp salt
- 1 egg, beat
- 1 mashed banana
- 1 sliced banana
- 1 Cup Skim Milk
- 1/2 Cup water
- 2 tsp vanilla
Preheat your oven to 180 degrees (200 if it’s not fan forced)
Mix the oats, baking powder and salt in a mixing bowl. Mash up your first banana; Beat the egg, and add the banana, egg, milk, water & vanilla to bowl, mixing the whole lot completely.
Line a cake tin with grease proof paper; Layer the bottom of the lined tin with sliced banana, pour the mixture into the tin, and layer the top with the rest of the sliced banana (if you have a good size banana, you might even have a bite left over!)
Whack it in the oven for about 30 minutes, check it towards the end, make sure you don’t over cook it and burn the top. Once it looks well done, remove from the oven and allow to cool a bit.
You should be able to slice it like a cake. It is best served warm, with honey drizzled over the top to give it some extra health and vitality, as well as even more yummy factor!
