Curried Red Kidney Beans

This week I am trying to use up the various bits of stuff in the Pantry. To that end, I needed something to rid myself of two cans of red kidney beans;

  • 2 cans red kidney beans
  • 1 medium onion, chopped finely
  • 1 clove garlic, minced
  • 3 cloves
  • 2 large juicy tomatos
  • Small bunch of fresh Coriander, chopped
  • 2 heaped tsps garam masala
  • 1/2 tsp chilli powder

Saute onions in oil until slightly brown.
Add cloves, garlic and tomatoes and saute until the tomatoes are soft and runny.
Add drained beans, salt, chilli pdr and garam masala.
Mix. Add a little water depending on the consistency you want.
Simmer at low heat for approx 10 mins. Sprinkle fresh chopped cilantro before serving.
