The plan here is to buy a roast chicken from the supermarket at closing time when they mark them down. Perhaps even buy a few if they are cheap and just freeze the extra meat. If the supermarket is not forthcoming with cheap chooks, perhaps we just buy a raw one and cook it ourselves.
- 1 Roast Chiken
- 1 Potato
- 1 Sweet Potato
- 1 Turnip
- 4 Carrots
- 2 Cups of Red Lentils
- 1 Cup Split Peas
- 1 Leek
- 2 Sticks of Celery
- 1 Small onion
If you get yourself a roast chook from the supermarket, strip of all the meat and have a nice chicken salad for dinner. Put the skin, bones and stuffing into a pot with enough water to cover it nicely, and let it simmer covered in a pot for about 4 hours. Then, strain out all the chunky bits and you have your chicken stock.
Now all you have to do is chop up all the vegetables, throw them in and simmer the soup until all the vegies are cooked.
If you are roasting your own chicken, you are going to need to season the soup. I’d go with Garlic, Pepper and maybe some mixed herbs.
The plan is to freeze portions of soup for later.
