- 4 blue-eye or other firm white fish fillets, skin removed
- 1/2 cup polenta
- Sea salt and freshly ground black pepper
- 4 tbsp extra virgin olive oil
Coat the fish fillets in polenta and season with salt and pepper. In a frying pan, heat the olive oil until smoking over a medium to high heat. Cook fish until golden brown, about 3 minutes per side.
Sounds like a quick and easy way to do up some fish, and I think we’d just have it with a nice salad.
